Ingredients (for 4 people)
4 tomatoes regularly shaped, 50 grams of Marenchino butter, 4 eggs, 50 grams of Bra Duro Marenchino crumbs, parsley, salt and pepper.
Wash and dry the tomatoes and cut the top, in order to obtain four caps. Remove the inner pulp, insert a knob of Marenchino butter inside of each tomato and put them in the oven, covering them with their caps, for 10 minutes. Remove from the oven, break an egg into each one and cover it with a teaspoon of Bra Marenchino and some chopped parsley. Add salt and pepper, cover and bake for another 10 minutes to finish the cooking.
