It’s a fresh cow’s milk cheese, with a sweet but also a bit sour taste. Our cheese makers add to the cheese the rocket, that eriche the final product. The processing is entirely by hand, according to the tradition. Great to be consumed after 4/5 days of seasoning, if the days of seasoning are more than these it becomes more intense and fragrant. |
